Orange Zucchini Cake with Orange Cream Frosting

Orange Zucchini Cake
 

Ingredients:

2 cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp ground cinnamon

1 tsp ground nutmeg

1 1/2 cups sugar

1 cup vegetable oil

4 eggs

1 cup Kellogg's All-Bran cereal

3 tsp grated orange peel

2 tsp vanilla flavoring

2 cups grated zucchini

1 cup chopped nuts

 

Directions:

  1. Preheat the oven to 325°F. Grease and flour a 9x13-inch baking dish.

  2. In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

  3. In a large mixing bowl, beat together sugar, oil, and eggs until well combined. Stir in the cereal, grated orange peel, and vanilla. Add the flour mixture, grated zucchini, and chopped nuts. Mix until just combined.

  4. Pour the batter into the prepared baking dish.

  5. Bake for 35-40 minutes or until a wooden pick inserted near the center comes out clean.

  6. Allow the cake to cool completely before spreading with orange cream cheese frosting.

 

Orange Cream Cheese Frosting 

Ingredients:

1 package (3 oz) cream cheese, softened

1 Tbsp margarine or butter, softened

½ tsp grated orange peel

1 ½ cups sifted confectioners’ sugar

Milk, if needed

Nuts – optional

 

Directions:

  1. In a small mixing bowl, beat the softened cream cheese, margarine, and grated orange peel until light and fluffy.

  2. Gradually add the sifted confectioners’ sugar, beating until the frosting is fluffy and reaches spreading consistency.

  3. If the mixture is too thick, add 1 to 2 teaspoons of milk to achieve the desired consistency.

  4. Top with nuts if desired.
